History of Rum
Rum's origins can be traced back to ancient India and China, with the first distillation of rum taking place on the sugarcane plantations of the Caribbean in the 17th century. It quickly became popular among colonial America, playing a crucial role in the infamous Triangle Trade, where it was exchanged for slaves in Africa and then traded for sugarcane in the Caribbean.
Production Process
Fermentation:
The first step in making rum is fermenting the sugarcane byproducts. Yeast is added to molasses or sugarcane juice, converting the sugars into alcohol.
Distillation:
The alcohol is then distilled, either in pot stills – which produce a fuller-flavored rum – or in column stills, which yield a rum with a lighter flavor profile.
Aging:
After distillation, rum is aged in wooden barrels, often previously used for bourbon, sherry, or cognac. The aging process can vary from a few years to several decades, significantly affecting the flavor, color, and price of the rum.
Blending:
Many rums are blends of different ages and types to achieve the desired flavor profile.
Types of Rum
Light Rum:
Also known as white or silver rum, light rum is aged for a short period and then filtered to remove any color. It's known for its mild flavor and is commonly used in cocktails.
Gold Rum:
Aged longer than light rum, gold rum acquires a golden color and richer flavor from the wooden barrels. It's used in both cocktails and for sipping.
Dark Rum:
Made from caramelized sugar or molasses, dark rum is aged the longest in charred barrels, giving it a much stronger flavor profile suitable for cooking or sipping neat.
Spiced Rum:
Flavored with spices and sometimes caramel, spiced rum can have any type of rum as its base. It's popular in mixed drinks for its robust flavor.
Rhum Agricole:
Made directly from sugarcane juice rather than molasses, it's primarily produced in the French Caribbean islands. Rhum agricole has a fresher, more vegetal taste compared to traditional rums.
Most Popular Rum Brands
Bacardi, founded in Cuba in 1862 and now based in Bermuda, is perhaps the most iconic rum brand worldwide. Its light, clean flavor has made it a staple for cocktails like the Mojito and the Daiquiri, supported by extensive marketing campaigns that have solidified its status in the spirits industry.
On the other hand, Captain Morgan, originating from Jamaica and now produced in the Caribbean by Diageo, has captured consumers with its spiced rum offerings. The brand's success is further buoyed by a broad product range and memorable marketing, making it a favorite for mixed drinks and social gatherings.
Havana Club, with roots in Cuba, holds a special place in the hearts of rum aficionados. Its adherence to Cuban rum-making traditions and its range of aged rums are celebrated for their authenticity and complex flavors.
Established in 1703 in Barbados, Mount Gay is revered as one of the oldest rum producers in the world. Its traditional production methods and exceptional quality have earned it acclaim, particularly among those who enjoy rum in its purest form or in refined cocktails.
Appleton Estate from Jamaica, with a legacy dating back to 1749, is renowned for its sophisticated flavor profiles that reflect the country's unique terroir. The brand's commitment to producing premium, aged rums has made it a favorite among both connoisseurs and casual drinkers.
Lastly, Diplomático from Venezuela is celebrated for its luxury rums that are made for sipping neat. Rich and complex, each bottle showcases the brand’s expert distillation and aging processes.Â
Most Popular Rum Cocktails
Mojito
This drink comes from Cuba, but its exact origins are debated, with experts saying it can be traced back to the 16th century when an early version called "El Draque" was concocted in honor of Sir Francis Drake. The Mojito, as we know it today, evolved over centuries, gaining popularity worldwide as a refreshing cocktail that perfectly balances sweetness, citrus, and mint flavors.
Recipe:
10 fresh mint leaves
1/2 lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 1/2 ounces white rum
1/2 cup club soda
Directions: Muddle the mint leaves and one lime wedge in a sturdy glass to release their flavors. Add two more lime wedges and the sugar, then muddle again. Fill the glass with ice, pour the rum over, and fill the glass with club soda. Stir well and garnish with the remaining lime wedge.
Daiquiri
This is another Cuban classic, named after a small town near Santiago de Cuba. It was supposedly invented by an American mining engineer, Jennings Cox, in the late 19th century. The drink was popularized in the United States by Admiral Lucius W. Johnson, who introduced it to the Army and Navy Club in Washington, D.C. It is one of the simplest rum cocktails, focusing on the rum's quality and the balance between sweet and sour.
Recipe:
2 ounces white rum
1 ounce fresh lime juice
3/4 ounce simple syrup
Directions: Shake all ingredients with ice and strain into a chilled coupe glass. Garnish with a lime wheel for a classic presentation.
Piña Colada
Meaning 'strained pineapple,' Piña Colada is a sweet, tropical cocktail from Puerto Rico. Several bartenders from Puerto Rico claimed its invention in the 1950s, but the most popular story credits Ramón "Monchito" Marrero, a bartender at the Caribe Hilton Hotel's Beachcomber Bar in San Juan. He purportedly created the drink in 1954 to capture the island's flavors in a glass.
Recipe:
2 ounces light rum
1 ounce coconut cream
1 ounce heavy cream
6 ounces fresh pineapple juice
1/2 cup crushed ice
Directions: Blend all the ingredients until smooth and serve in a chilled hurricane glass. Garnish with a slice of pineapple and a maraschino cherry.
Rum Punch
Rum punches are a broad category of cocktail that dates back to the 17th century. Originally from the West Indies, the basic formula, "One of Sour, Two of Sweet, Three of Strong, Four of Weak," has been a guideline for making various versions of rum punches. They're a festive drink that embodies the spirit of Caribbean celebrations.
Recipe:
1 part lime juice
2 parts sweetener (sugar syrup or honey)
3 parts rum (a mix of dark and light rums is ideal)
4 parts water or fruit juice (pineapple and orange juice are popular choices)
A dash of bitters and a sprinkle of nutmeg
Directions: Mix all the ingredients in a large pitcher or bowl. Serve over ice in punch cups or glasses, garnished with fruit slices.
Dark 'n' Stormy
This is Bermuda's trademarked cocktail. It is closely associated with the Gosling Brothers Ltd, who claim the drink was invented just after World War I. The cocktail's name reflects its appearance, which resembles storm clouds that might bode ill weather, with dark rum floating on top of ginger beer.
Recipe:
2 ounces dark rum (Gosling's Black Seal for authenticity)
3 ounces ginger beer
1/2 ounce lime juice (optional)
Directions: Fill a highball glass with ice, add the lime juice (if using) and ginger beer, then float the dark rum on top by pouring it over the back of a spoon. Garnish with a lime wedge.
