At the heart of Lalo Tequila is a legacy that spans three generations, beginning with Don Julio González and his son, Eduardo "Lalo" González. Together with a master tequila maker, coincidentally also named Lalo, the distillery produces a tequila that embodies the spirit and tradition of its forebears while injecting modern techniques and sensibility into every bottle.
Lalo's journey in the industry, marked by nearly a decade of experience, reached a pivotal moment when David Carballido, a childhood friend, proposed the creation of a truly pure blanco tequila. Their collaboration was driven by a desire to combine traditional tequila-making methods with a modern, Mexican aesthetic, resulting in a premium spirit celebrated for its crisp, clean taste.

Crafting Lalo Tequila
Harvesting
The process begins with the jimadores, skilled laborers who hand-harvest fully mature, 6-7 year-old agave plants. Selected for their sweetness and maturity, these agaves are the foundation of Lalo's unparalleled flavor profile.
Cooking
Lalo Tequila employs traditional brick steam ovens, known as "hornos de mamposteria," to cook the agave. This slow, meticulous process, lasting 20-32 hours with up to 18 hours of rest, ensures the agave's natural flavors and sugars are fully extracted, setting the stage for fermentation.
Extraction and Fermentation
The sweet juices of the cooked agave are then extracted using roller mills. Water is added to achieve the perfect sugar concentration before fermentation, a critical step that transforms the sweet agave juice into the blanco tequila known for its purity and crispness.
